Ingredients
Filling
- 4 ½ cups Heinz Diced Apples (31468)
- ½ cup Kraft Raspberry Jam (126211)
- 2 punnets fresh raspberries
- 2 ½ tablespoons corn flour
- 1 teaspoon vanilla bean paste
Pie Crust
- 2-3 sheets of ready-made shortcrust pastry
- 1 egg, lightly whisked with a little water
- Spray oil, for greasing
- Raw sugar, for sprinkling
To serve
- Icing sugar, for dusting
Method
1. To make the filling
Place the apple into a medium-sized bowl and set aside. Add the raspberry jam, cornflour, vanilla bean paste and raspberries to a small saucepan. Heat gently over the stove, stirring often until the spread has melted and the raspberries have cooked down, around 5 minutes. Remove from heat and stir the mixture through the apples. Set aside to cool.
2. For the crust
Grease a 24cm pie dish with spray oil. Line the dish with pastry, leaving around a 3cm pastry overhang around the edge. This is important to seal your pie later! Set aside while you prep the lid. Slice the other sheet of pastry into even-width strips and you’re ready to build.
3. To assemble
Pour the filling into the pie dish and spread evenly. Weave the pastry strips over and under each other, creating a lattice. Pinch the excess top and bottom pastry together and roll inwards to create a crust. Don’t worry about being too particular; rustic works well for this pie! Right before you’re ready to bake, brush the pastry with egg wash and sprinkle with sugar.
4. Bake
Preheat your oven to 180°C and bake the pie for around 30 minutes, until golden and the filling is bubbling. Allow the pie to cool slightly before slicing.
5. To serve
Sprinkle with a little icing sugar and add a scoop of ice cream if you like.
