Delicious and flavourful, this simple potato salad with hot-smoked salmon and fresh herbs is an easy salad to whip up and serve as a main or side dish.

Ingredients
- 1kg small white or red salad potatoes, halved
- 1/3 cup MasterFoods Whole Egg Mayonnaise (17063)
- 1-2 tablespoons dill, roughly chopped, plus extra for garnish
- Zest of 1 lemon, plus extra for garnish
- 1 cucumber, shaved into long ribbons with a potato peeler
- 3 radishes, finely sliced
- 250g hot smoked salmon
- Salt and pepper, to taste
Method
1. To boil the potatoes
Place the potatoes into a saucepan and cover with cold salted water. Bring to the boil and cook until tender. Drain and set aside to cool.
2. To make dressing
In a large mixing bowl, combine mayonnaise, dill and lemon zest. Set aside until needed.
3. To serve
Once the potatoes have cooled to room temperature, add the mayonnaise mixture and stir to evenly coat. Add the cucumber and radishes and toss through.
Flake in the salmon and garnish with the extra dill and lemon zest.
Notes
- Replace the salmon with hard-boiled eggs cut into wedges for a vegetarian option.
- Add some carrot ribbons, baby spinach and sliced green beans to boost daily vegetable intake.
- Sprinkle over some chilli flakes and dukkah for an added crunch and spice.
